Thelmas Caws Cenarth Caerffili

Thelma Adams began producing Caerffili in the 1980’s from a much older family recipe.  She produced a crumbly cow’s milk cheese that has a distinctive delicate lemony flavour.  Thelmas has a natural mould rind that is mottled grey-white in colour and the rind itself has an earthy, mineral flavour.  This is a wonderful cheese that should be on your cheese board
