Admiral Collingwood

This semi soft raw milk cheese rind is washed in Newcastle Brown Ale. This produces extra flavours as the characteristically pink rind develops. Admiral Collingwood has buttery savoury undertones giving way to a complex aftertaste. Made using traditional rennet, shaped as a 1 kg square truckles and, then is aged for up to 10 months.
