Gubbeen

Gubbeen is a semi-soft, cow’s milk cheese with a pink and white rind. The flavour is creamy with mushroom and nutty aftertastes.  This will vary depending on maturity of cheese.The rind of the cheese is washed daily as this process gives the distinctive surface bloom which develops the characteristic flavours.

The flavour becomes deeper as it matures.
