Gubbeen

Gubbeen is a semi-soft cow’s milk cheese with a distinctive pink-and-white rind. Its flavour is rich and creamy, with subtle mushroom notes and a nutty finish that varies depending on the cheese’s maturity.

The rind is washed daily, a process that creates the characteristic surface bloom and helps develop the cheese’s unique flavours. As the cheese matures, its flavour deepens and becomes more complex.
